You might try something like Write LaTeX for your iPad. I've never used it, so grain of salt, but the other iPad users I know use online compilers of that sort.
I honestly can't imagine using an iPad as a mini-laptop---so much of what I do on my laptop is not web-oriented that it would be difficult for me. And having to carry around a separate keyboard would make me go spare, I think.
