Kirk is a risk-taker, but he's not a thrill seeker.
He was an excellent captain but, there really is no cause other than thrill-seeking to bare-handedly rock climb El Capitan. And he was how old when he did that? Kirk clearly always had some thrill-seeker in him, and he's a far younger man 'now' than he was when he did that, so he probably hasn't developed all of the judgement that he eventually will.
(That said, I haven't seen the movie yet so I really can't say whether or not the portrayal is in or out of character for Kirk).
I had a great time with the movie, too. The characters were what did it for me, not so much the storyline. Though the alteration of the time sequence is a classic Trek maneuver.
It is nice to see everyone so energized about Star Trek again. At the core it has a sense of hope that feels very different from Star Wars. I guess because it's our future we're hoping for.
Star Trek (my first fannish love)always seems a little more real, like we could really do this unlike Star Wars and its core of magic. I actually know engineers and scientists whose first inspiration was Star Trek. And I must admit to being a Kirk girl from way back.
And the reboot is genius in its way: they can do absolutely anything without the stepping on established canon. They could actually kill one of the iconic characters and get away with it.

Dunno about George though--that's a really good question.
