Ideas needed!

My mother is having knee replacement surgery next Friday and will be laid up for several weeks. My sister and I are taking it in turn to stay with her and my dad for the first week, but we'll eventually go back to work. I want to cook some meals in advance that I can freeze and they can re-heat as needed ( Read more... )

Make vegetable soup (or any kind of soup) and freeze individual portions!

Roasts generally freeze pretty well. Beef, pork or lamb will do nicely. If you have a crockpot, you can cook that thing all day while you're at work and it will be beautifully tender. I just got a pressure cooker and I LOVE that I can do a huge three pound beef roast in 45 mins. and still have it as tender as a crockpot roast ( ... )

Oh, I hadn't thought of roasts! And ham! They love honey-baked ham and that would be easy to get/serve/freeze/etc. And good idea to not pre-cook the veggies! Thanks for all of the suggestions!!

Alas, I have no recipes because I'm a terrible cook, but my mom just had a knee replacement in May, so I'm having lots of sympathy for your mom. It's really painful and a lot of hard work in rehab, but if she can muscle through it, it will be worth it.

Thanks, hon! I am not looking forward to that first week or so because I hate seeing her in pain. But then she's in pain now and at least at the end of this things will be better.

Boeuf bourguignon or a more simple beef stew freezes nicely and they taste pretty good after reheating.

I hope your mom's surgery goes well! It's great that you and your sister will be able to help while she's recuperating.
