Sam is saying this in reply to a napkin the Bar just gave him; then there's another napkin, and he nods.
"We both know I wouldn't do that. But I wanted to be sure you were aware."
After quite a bit of perusing of books behind the counter, he goes to the board:

Interesting theme.

"What's the green apple cider?" Urquhart asks.

"Cider. With..." Sam consults the books he looked through, which are laying just behind the counter open to various pages. "Something melon-flavored in it as well. I've no idea what sort of melon."
He would presume an Earth sort of melon, though one can never be sure with the resources here.

"Melons are good," Urquhart says. "I'll have one of those."

"Good choice. Not least because it's probably the simplest thing I put on the menu."
He doesn't sound all that upset, as he goes to prepare the drink; it was his bright idea to go for complicated, after all.

There is a young woman (older girl) in bangles and a jeans coat eying the specials dubiously.

It's the names, really. She can never tell with those names which one might have vodka in, and which ones would be sweet enough to give Yulia a sugar rush.

"Were you looking for something in particular?"
Social niceties aren't always Sam's strong point, but he figures he can at least try.

"I never know what to pick, in lists like this. What is good, what is bad, what is the leftovers being mixed together for a quick sale." She explains, the thin silver bracelets hanging over her wrist chiming as she waves a hand at the board. "I never did much drink cocktails."

"...Well, I picked things for the colors and I don't know from Earth drinks, so I can't tell you what's good. But I can guarantee none of it's leftovers."
At least he's honest about not knowing what the drinks are like?
"I can tell you what's in the things, if that would help. I've left the instructions open back here."
