Thanks for reminding me about Castle - one of my best friends lent me the first season a couple of years ago, and at that point I was following too many series and so couldn't fit it in. So that's an obvious starting point.
Slings and Arrows *is* amazing! I have a region-free DVD player which was crucial in watching it. I think you'd really enjoy it.

Totally ancient recommendation, but if you like slightly off-kilter brain puzzles, have you ever seen the original of The Prisoner? It's rather dated (made in 1967), but still very entertaining.
I must investigate getting a region-free copy of S&A, especially as I am acting in Shakespeare at the moment, so it might add perspective.

Veronica Mars - very similar tone to Buffy which I think (?) you enjoyed.
The Good Wife - premise is politician's wife who stands by him after scandal having to go back to work as a lawyer. Lots of really good female characters, v good dialogue, deals with a lot of moral issues but might be too "grey" for your tastes? Not sure.
Ugly Betty - this is a tremendously silly show in a number of ways but is, at its core, v hopeful.

I loved the recent version of the Musketeers - no swash unbuckled, or buckle unswashed.
I presume you saw Jonathan Strange and Mr Norrell, but if you didn't, do.
