It's really awesome you have someone who supports you so much. <3 My husband is the same way. He actually went through RCIA and became (officially) Catholic.

Scotland would be pretty amazing, especially since my partner is half-Scottish so it would be special for that reason too... Hmm, I can see this becoming a strong possibilty! ^^
