Beef and Chinese Pea Pods over Snow

Something a little different for today's posting. As you can probably tell, this is one of my favorite recipes. I first cooked it about 38 years ago and still make it. If you don't like snow peas, this works well with broccoli, green beans and peppers.

I remember eating snow peas straight from the yard at my friends house. He had a little snow pea vine thing, they were so delicious! Love them!

You can't beat fresh snow peas. The Big Guy's dad was the one who introduced me to this dish (and later gave me the cookbook). He would grow snow peas every year to use in this dish. Every time I make this, I think of him.

This is also good if you toss some red pepper flakes into the mix! Sweet and hot - a little like me. *grin*

Did that come from a big fat cookbook made up of little individual cookbooks? Or ... maybe I'm remembering the softbound ... Betty Crocker cookbook?

The page looks very familiar - like one my dad had (he loved to cook)

It's from a cookbook called, Lily Chin's My Favorite Recipes.

It has different colored pages and is bound with one of those cheap plastic spines. It looks like something a church group would do.

There are several of her recipes that I use, but this one is my favorite, as you can probably tell from all the stains :)
