Ways with courgettes

What can you do with courgettes? In the culinary line I mean, other uses not requrired at this particular point, thank you very much.

I do:
  • fried with coriander seeds
  • fried with lemon and garlic
  • cut into long thin strips which are charred under the grill and then choppped into shorter pieces and marinaded in balsamic vinegar (a particular favourite)

They're pretty delicious roasted in chunks with yr preferred oils/herbs, they somehow acquire a delish sweetness.

Similar to no. three, but using the strips as 'pasta' with oil/sauces/cheese/pine nutsNom.

Cut into v.v.thin slices, lightly oiled and grilled, turning often till they are crispy. I love this with courgette and aubergine, a spicy tomato salsa/sauce, quinoa and spinach.

The only useful thing to do with a marrow is to put it in the compost, I'm afraid. As you say: not worth the effort to attempt cooking it.

I use courgettes in pasta sauce of various sorts.

Actually, I do have one other use for a marrow: chop it in half, let children play with it (they often scoop out the seeds and then pretend the halves are boats).

Grate courgettes and wrap in a clean teatowel; wring the juice out of it (this bit is fun).
Mix wrung, grated courgette with some chopped mint, black pepper, one egg and some feta cheese.
Wrap dollops of this up in filo pastry, rub with butter, stick in the oven for 20 mins.
(Sounds complex but is a pretty quick meal.)

Thanks for the other suggestions.
Marrows - mother used to fry marrows with onions and garlic and add tinned tomatoes and black pepper. I remember it as delicious, but I haven't had it since I was tiny, in the year of the marrow glut.

I think that sounds absolutely delicious. Unfortunately, no one else in my household would like it. But I might adapt it a little to make it palatable to the fussy ones.

I'm unpersuaded by the marrow recipe though.

I have a lovely recipe for Much Garlic Soup http://purplerabbits.dreamwidth.org/292750.html which could be made with more gourgette (and less garlic, if you want)

Grate garlic, press to dry it a bit and make frittata (basically fry with/without onion and pour lots of beaten egg over to make an Iberian type omelette

I had lunch with a friend recently and she sliced the courgette, fried it with some onions, added chopped tomatoes and served it on toast. It was lovely.
