Ever since I cut way back on sodium, I've missed sausage like you wouldn't believe. Last night I may've hit upon a recipe that actually tastes good. It was all trial-and-error, so I'm putting down as much as I can remember before I forget completely ( Read more... )

I wonder if it would work with other meats? All the recipes I looked up said pork, but there are beef sausages, and chicken ones... maybe it would even work in a vegetarian version.

That might be safer... Pork is not so good. Of course, I am on a very strict diet at the moment, so I am probably not the best source of information. When you read Dr. Servan-Schrieber's book, you, too, will worry about everything you eat. But you have different things you're not allowed to eat than I do.

Strictly speaking, I don't have "forbidden foods," but if I go over 2,000 mg of sodium/day, I usually pay for it.
