I've been making that stacked roasted vegetable enchilada dish since you posted it the first time, and THANK YOU. It is so so good. I will check out some of the others too!

You can also use finely diced, lightly stirfried cauliflower in place of rice. We do that a lot.

also, I lovedlovedloved Animal, Vegetable, Miracle, just as much as I did Barbara Kingsolver's fiction books, which is to say quite a lot. It made me depressed and wonderfully hopeful about food all at the same time. And then I wanted to do nothing but cook for weeks. Maybe worth a reread right before planting time this spring...
