This is why you should take phone interviews even if you don't have that much interest in the job (there are very graceful and polite ways to kill the process afterwards.)

But the factor you can't control is whether or not it's an interview or a 30 minute Q&A. The former is a pretty natural discussion; small tangents might be taken and you can go into detail if you want. A Q&A is just that. Asked, answered, next question. I hate the latter. They make me want to just cut the whole thing short on principle.
