Jane the Virgin and Happyland are two shows that I hadn't really intended to check out, neither sounding very appealing to me, but I watched the pilots out of boredom and really liked them. I've heard good things about Jane, though my impression was there was a concurrent side-story with the lawyer along with the many others?

The lawyer was a bit character brought in to give Luisa advice in the first episode, so very much a side thing there, but gets more tied to the main plot at the end of the second episode. There are a lot of subplots and side stories, but they're all tied into the main plot in one way or another.
