Healthy Meals for Losing Weight

It would appear that I'm not very good with menu planning. Well, I guess I'm great at the planning; it's the execution that falls apart. My husband hates my attempts. He cooks a lot of the time, and he's a cook-on-the-whim type. Or we'll have a stressful day and decide on a quick meal instead of whatever's planned. Good for you! Those recipes look tasty. I've been cooking healthy for a while now and have found that CookingLight.com has some really yummy, easy recipes. I have a HUGE sweet tooth - you should try Jello mousse cups, which have like 60 calories each, or the new Skinny Cow candy - the dark chocolate dreamy clusters are SO yummy and only 120 calories for a pack. Thanks so much for the tips - and for the encouragement! I'll check out that website in the morning, when I'm fresh. I'll have to look for those snacks. I've gotten some sugar free jello pudding, but they haven't been eaten as quickly as I expected. I've never heard of the skinny cow candy. I'll have to look for it. Assuming that I don't fail horribly, I'll keep everyone updated! lol Feel free to give me a ping or a virtual kick in the butt if you don't hear back.

just as an idea from one light breakfast eater to another:

plain rice cakes with peanut butter and some dried fruit is a really healthy (especially compared to pop tarts), and a pretty good protien/fiber punch to get the day started. Added bonus, it's dairy and gluten free (depending on your rice cake, I suppose).

Thanks for the tip! I must admit, I really hate peanut butter. I know that I'm about the only person in the world who does! I recently bought some almond butter, since I love almonds, to see if that was even better. It was too much like peanut butter for my taste. There's something about it that I've just never enjoyed. Unless it's in a cookie. I love me some peanut butter cookies, but I guess it's not altogether too healthy in that form.

Actually, you"re not alone! When I studied abroad in ecuador, Ecuadorians were unanimously repulsed by it! Whenever U.S. students atr it for lunch they practically gagged. They were never able to explain why.

I love to cook but I hate doing it after a long day of work. One thing I've found that works for me is doing some batch cooking on the weekends and store it in individual servings. It helps keep me from reaching for quick, easy, unhealthy alternatives.

That had actually been my plan for today, but I'm dealing with a sick baby while the hubs is off for the day. I'm hoping that I might get a shot to do just that one day this week. We'll see.
