So I got this culinary bug this weekend and I had to go shopping for this idea I had. I bought baby eggplant, zucchini, crookneck squash,spinach, mozzarella and feta cheeses, garlic, fresh oregano, basil canned diced tomatoes and mushrooms oops I totally forgot to put the mushrooms in. LOL I had no idea what a "crookneck" was and had to look it up. You know we make a faked out veggie pizza you take cauliflower frozen or fresh depending on what you have top it with a good pasta sauce / herbs, then top it with some grated mozzarella cheese and bake it in the oven. I jokingly call it "poor man dieters pizza" but it's really good and it's a no bread kinda thing you can eat and its filling. Not a high protein meal but well you do get some protein from the cheese but its something different to work in more veggies in the week.
