I should probably mention (disclaim?) that Etivaz isn't actually a French cheese. It is made in Switzerland, only once a year leading up to Christmas, and is a very special, very unusual, very unique and distinct, earthy, nutty, wonderful cheese. YUM!

I don't know! It just is! Everything we make in it comes out infinitely better than we expect, and we love, love, love the convection oven feature--use it all the time.

When we decided we could do with a newer toaster oven, we looked at America's Test Kitchen's review of toaster ovens which had luckily recently been updated. If I recall correctly, they recommended the Krups FBC-4. We couldn't get that from Macy's, where we had a bunch of gift certificate stuff, but we could get the FBC-2, which is apparently the same except that it doesn't have pre-programmed "cook this type of thing" buttons (which really aren't necessary). So, we got the FBC-2.

It appears to be $200 list, and is available various places including Amazon for $40 or more less than that.

Cool! Thanks for the info. Always looking for a good toaster oven (arguably the most used appliance in our kitchen).
