Garlic would be the answer. It's in pretty much all Korean dishes.

Seriously? The main ingredient? I like garlic considerably more than the next man but that's a fearsome prospect! o_0

I know Korean people and have learned recipes from them. Most everything has garlic in it in some part. They eat kimchee with pretty much every meal and garlic is one of the main ingredients in fermenting it. It's quite an important spice for them. :D
