During the last couple of weeks I've been trying to use up my non-kosher-for-Passover staples. To use up some couscous (and some leftover celery that was starting to go bad) I served it with this sweet potatoes and chickpeas dish. I bet you could also do zucchini "lasagna" - cut zucchini into very long, narrow strips; salt them and let them ooze for a bit then pat as dry as possible on paper towels and use them instead of lasagna noodles. Not nearly as good as the real thing, but I tried it when Atkins-friendly recipes were everywhere.

That recipe for quinoa sounds really good.... I wonder if I still have some in my pantry. Will have to check.

I think this is awesome.

Also, the Physicist recently made quinoa for me, and while I wanted to like it because it seems like the healthiest food evar!!!, I just couldn't like it. It was like eating tiny little fish eggs. Ick.

Yeah, I know...This is what I get for actually having caffeinated soda...I should've been able to go to bed an hour or two sooner than I did.
