I'm glad John cannot draw his sword whenever he wants, that would lead him down a dark path. Can he only use it to protect Sherlock? Or is there another trigger? So many questions! I can't wait for more!

All of those little interactions or observations that John has of the Other beings are just so fascinating! The interactions between various Guardian Angels and their charges. The different kinds of Other that guard humans. Tup. <3 ( ... )

To answer some of your questions, yes, Watson most certainly had a Guardian Angel, who would have been re-assigned upon his death. But GAs and most angels, actually, are a bit like the military. They live to serve, not to question. They tend to be singularly focused for the most part on their ward and don't generally interact with one another. John was something of an exception to that. The other Guardian Angels have certainly noticed that Sherlock and John don't have GAs, but that is not necessarily a surprising thing and they would not generally react to it unless they were starting, like John, to break out of their traditional mindset.
