Thank you sweetie :) And how do we celebrate? Huh, I'm lucky to live in the capital city so there are always many things to chose from: besides boring official speeches there are concerts, historical performances, usually connected to the interwar period (we regained our independence in 1918), displays of military equipment from various periods, parades, also most museums and theters organize something special for the occasion. I had fun today :) And you are totally right, pierogi are GOOD! One of my favorite dishes, any kind of them, but especially when my mom makes them with apples, yum!
I was going to ask what Lisa asked. That all sounds so neat though! I wouldn't know where to start. It'd make for a great day that's for sure. And since I don't know what pierogi are, now I'm curious. But most things with apples are delicious, so I'm going to try and figure out how to make some.
Thank you, sweetheart :) And I believe pierogi are what they call in English dumplings. It's a kneaded though stuffed with...well, whatever you want, and then boiled. They can be stuffed with fruits (usually plums or strawberries, apples are rare anywhere beside my mom's kitchen :), the stuffing can be also cabbage and mushrooms (most typical and in my family absolutely essential for Christmas!), white cheese, meet or the combination of potatoes, cheese and some fried onion (the last one we call "ruskie pierogi" 'cause their origins are (or it is said so) in Ruś Czerwona (Red Ruthenia?), now in Ukraine. OMG, that was some long explanation. I hope satisfactory too? :)
Very satisfactory explanation! Now I especially want to try some, though I'm certain I can't make them as good as how they're supposed to be. Those sound like quite the Christmas treat. I love trying to bake new things, so this should be fun to try. And I especially like the idea of your mother's apple ones. I love apples. :)

Thanks for adding me, btw. ^^
Do you want to know something? =) I´m not a internet-psycho-stalker, but I guess, that´s what they all say ...
