NotTasha does great Vin and Ezra stories, especially especially the Amazon series here. (She also has some lovely ones centred on Ezra and Chris, though they do include the whole Seven :)

On the team side, I'm very fond of Devil's Mouth by Beth, AS the Days Go By (Ezra-centric) by Luna Dey & Lisa S, Texas Hold 'Em by Mitzi (it's ATF), and absolutely everything by J Brooks.

Don't Know From Adam would fit #1, though it's been awhile since I read it and I seem to recall a modicum of angst and injury.
