Recipe Time! Chocolate Eclipse Cake

Saturday was my mom's birthday, and I am such a good daughter that I baked her a cake from scratch. More precisely, I baked a Chocolate Eclipse Cake. The recipe is from Mollie Katzen's Still Life With Menu. It's so very chocolatey that bringing it into Azkaban will clear it of all Dementors. I just ate a monster corned beef sandwich and managed to squeeze a Costco Berry Smoothie in there, so I'm not ready to look at food, but anything chocolate sounds great :9

Nov 10-16, although it looks like Tuesday to Thursday are my best days. (And I'm already contracted for dinner for Tuesday and maybe Wednesday nights!) If you're free during the day, that would be good, too; and I'll keep you posted on any changes in my SF schedule, if that will help :)

Sounds interesting, and reasonably like my favourite chocolate self-saucing pudding recipe (milk, butter, brown sugar, dry ingredients, boiling water for sauce). I'll have to try it sometime.

It always amuses me how American recipes have these small but distinct differences from Kiwi ones, like the extensive use of buttermilk. I'd have to search to find buttermilk in the supermarket, let alone cook with it.

Heheh...I was going to say "what? You think people actually DRINK the nasty stuff?" Everyone I know only uses it for baking, or as a marinade for fried chicken.

Sounds delicious! Just what I *really* need when trying to lose weight!!

May I give you a dead easy, one-bowl chocolate coconut cake to try? We are metric in Australia, so we use a 250ml cup; and 250g is approximately 8 oz.

Ingredients:-
250 g butter, melted
1/2 cup good cocoa (I tend to use a little more, as I like it really rich!)
1 1/2 cups caster sugar
3 eggs
1 1/2 cups coconut
1 1/2 cups self-rasing flour
3/4 cup milk

Heat oven to 180C. Line a 24 cm (10 inch) round cake tin with baking paper. Put all the ingredients into a large bowl and mix until smooth (you can do this with a spoon,you don't need beaters), pour into cake tin and bake for 50 mins. Cook on wire rack. Spread cake with chocolate icing / frosting of your choice, or sprinkle with cocoa and serve with thick cream.
