It always amuses me how American recipes have these small but distinct differences from Kiwi ones, like the extensive use of buttermilk. I'd have to search to find buttermilk in the supermarket, let alone cook with it.

May I give you a dead easy, one-bowl chocolate coconut cake to try? We are metric in Australia, so we use a 250ml cup; and 250g is approximately 8 oz.
Ingredients:-
250 g butter, melted
1/2 cup good cocoa (I tend to use a little more, as I like it really rich!)
1 1/2 cups caster sugar
3 eggs
1 1/2 cups coconut
1 1/2 cups self-rasing flour
3/4 cup milk
Heat oven to 180C. Line a 24 cm (10 inch) round cake tin with baking paper. Put all the ingredients into a large bowl and mix until smooth (you can do this with a spoon, you don't need beaters), pour into cake tin and bake for 50 mins. Cook on wire rack. Spread cake with chocolate icing / frosting of your choice, or sprinkle with cocoa and serve with thick cream.
