finally learned to make tamales tonight. that is what Bill and I do on vacation.
we made:
mushroom poblano onion
soy chorizo sweet potato
blackbean roasted corn poblano
pineapple sweet potato

I would make all of these again, making minor adjustments. I will also try out others like roasted plantain.

yes. i "hate" tamales but i feel like that's really not necessary!! i have had some good ones, but they are rare. just can't take the bland dry beef in the bland dry corn that most of them are. these sound delish.
