I'm (just barely?) old enough to remember when neighborhood bars had big jars of pickled eggs ... which seemed to have been sitting there for decades!

I think that it's a great idea. Sometimes, there is nothing better than a nice oval, salted boiled egg. As snack.
The jar of eggs above looks pretty, as well. I'm sure they must have kept refreshing it. I have no idea if how long they would keep, in vinegar, without being sealed up.
My jar of eggs looks quite nice. A little green from the pickle juice. A little ghostly and almost sexual. Just waiting for some male to come along.
