Called in the Kombucha today.

So, I had two jugs going.  One jug was already sweet Kombucha tea.  Since it had too much sugar, I added a little active apple cider vinegar, to eat away the sugar.  A few days later, it actually worked, and tastes great sour, mmmm, but still with a tiny bit of sugar ( Read more... )

It's basically sweet tea fermented with a Japanese starter. As it ferments, the culture grows into a mat at the top. They used to advertise this mat as "Kombucha Mushroom". But it is actually scum so tough that some companies make it into clothing - like rain-wear(!)

Kombucha tea tastes great and is being sold in grocery stores. I started my culture off of store-bought K tea. But I don't like how much sugar is in them, and they are too expensive. My great achievement was using the culture (starter) on cranberry juice, which turned out awesome. It's a fun thing to do. It is very witchy. I ferment wine and apple cider vinegar as well - also sauer kraut. These are all great for the gut, nudge nudge.

I'm glad it turned out awesome :D As good as it might be for the gut that's a world I don't want to get into. I'm really picky with tea :P

I don't really think of it as tea. It's comparable to ginger beer or something.
