I made some beauties, if I do say so myself. I found a pattern in a magazine YEARS ago and used it every time, with cardboard templates. I also once made a gingerbread creche and often made gingerbread Christmas trees.
They really are a lot easier to make than it would seem. My kids each used to make themself a smaller one while I made the large one. Alice's was always lovely and artistic. James, who had my sweet tooth, would just cram on as many candies as he could. LOL. =>}
Hopefully someday I'll have at least one grandchild to make one for again. =>}

One year, I made eight. Some for raffles, some for gifts, one for us of course.
After the New Year, I'd let the kids start eating them. =>}
