I think it was a spur of the moment thing--I don't think Bo intended to kill her, but her instinctive reaction was to have the knife in her hand. And that Bo was too close (emotionally) to think about it logically and just try to knock her out.
Trick is sort of ridiculously awesome, yes.
As for hiring Lauren -- I don't think it would ever occur to Lachlan. Lauren's human, after all, and the Fae really don't see them as anything more than tools, slaves or food. You don't offer food a job.
Then again, if he did consider it, he probably also considered the probable reaction to an offer of work from Lauren. IE, he's part of the whole group of people who have kept her bound as a servant/slave for five years (and treated her like a piece of equipment he owned when they first met), and what sane or intelligent human is going to say "Gosh, I'd love to work for the people who owned me!" ?
