You should make cheesy spinach and artichoke dip:
1 can of artichoke hearts
1 package fresh chopped spinach, thawed, drained
3/4 cup grated parmesan cheese
3/4 cup mayo
1/2 cup mozzarella cheese
1/2 tsp. garlic powder
preheat oven to 350 degrees. mix all ingredients until well blended. Spoon mixture into baking dish and bake for 20 minutes. Serve with crackers or french bread pieces.
If you like you can get crazy and add chopped red pepper to sprinkle over the top when it is done baking.

Let's face it Dibs, you just can't go wrong with spinach artichoke dip.

I seriously was thinking about that - how well does the recipe double or triple to accomodate 30 people??

I would imagine pretty well, you will probably just have to bake it longer.
