I have never been a huge mayo fan.  I do like the creamy texture it gives to sandwiches or say chicken salad, but I don't care much for the flavor and just knowing that I'm spreading a glob of fat on my food has always kind of turned my stomach.

I'm so glad you did! I'm actually allergic to the egg yolks in mayo and sometimes can't find a way around using it in certain recipes--this looks like it would be excellent. One thing I wonder--Truvia--that's the stevia, right? It always has a slightly licorice aftertaste to me. Do you think Splenda would work? I'd probably have to use less because to me Splenda is actually sweeter than sugar and I never measure it one-to-one when I am substituting.

Are you familiar with Hungry Girl? She also has some amazing substitutions in her books and her website. Her pumpkin brownies are to die for!

I'm sure you could use whatever sweetener you wanted. :) This mayo recipe is super good. I think it's much better than 'regular' mayo and I think you'll really enjoy it.

I'm not sure if I'm familiar with Hungry Girl or not. You'll have to link me! :)

This isn't a normal mayo recipe but it's a much healthier version since normal mayo is made with oil and eggs, and other things.
