I just saw the new 'Star Trek' movie. Let's just say, if you see one movie this year, this is the one to see.

The cakes this place makes are amazing:

I'll go easy on you for now :-p

KEY LIME TARTS!!!!!!

1 - can sweetened condensed milk
1 - 8 oz coolwhip
1/3 cup key lime juice (plain lime juice works too)
vanilla wafers

That's it!
Line some muffin tins with the vanilla wafers, flat side up
Then mix the milk and lime juice and then add the cool whip. You may not need all of the cool whip.

Finally you can add just a touch of green food coloring if you want to give it a bit more color since it won't look very "limish". You won't need much food coloring though.

Toss in the fridge to set for 15 mins or so

Spoon into the muffin tins onto the wafers. You can then add shredded coconut or sliced strawberries or garnish how you like..you could do other berries too if you wanted

you could also do shaved chocolate (dark)...or pineapple chunks too

One of my favs. Not exactly a main course, but an easy appetizer. I suggest using fresh mozzarella in water. It's more expensive, but it's absolutely delicious.

Deep Fried Mozzarella

1 lb Whole mozzarella cheese
3 Eggs, beaten
1/2 c Flour
1 c Bread crumbs
1/4 c Parsley, chopped
4 c Vegetable oil, for frying
Marinara sauce, to serve

Cut mozzarella cheese into 3-inch sticks about 1/2 inch thick.

Combine bread crumbs and chopped parsley in a small bowl and set up beaten eggs in another.

Place flour on a plate.

First thoroughly dust cheese sticks in flour, shaking off any excess. Dip in beaten egg, coating thoroughly, and then in bread crumbs. Press lightly to ensure an even coating.

Refrigerate 15 minutes to allow breading to set up.

In the meantime, heat oil in a heavy skillet just large enough to allow for 2 inches of oil. When oil is hot, fry a few cheese sticks at a time to a golden brown. Drain on paper towels. Repeat until all cheese has been fried.

Serve hot with marinara sauce on the side for dipping.

Is there any type of food you don't like? I just don't want to give a recipe that has stuff in it you wouldn't eat.

1 Tablespoon oil
1 lb chicken breast, sliced...about 3 fillets
1/2 c diced onion
1 clove garlic
4 cups chicken broth
1 cup masa harina (mexican corn flour)

3 cups water
1 cup enchilada sauce, canned
16 oz velveta cheeze, diced
1 teaspoon salt
1/2 teaspoon cumin
1 teaspoon chili powder

saute chicken in 1 tablespoon oil for 4-5 mins and set aside
Add onion and garlic and saute for 2 mins
Add chicken broth
combine masa harina with 2 cups water in a medium bowl and whisk till blended

Add masa mixture to a pot with onions, garlic and broth...add remaining 1 cup water, enchillada sauce, cheese and spices

Bring to boil
Shred chicken and add to pot
Reduce heat, simmer 30-40 mins OR until thick

Garnish with tortilla chips, pico de gallo/salsa, and/or shredded cheese on top

You can probably do it in a crock pot, though I've never tried. It freezes rather well, so you can made a pot, and freeze what you don't eat.
