Yes, it's been ages since I made an LJ post. Several computer snafus have really limited my ability to do things online in the past several months. Insignia is a decent brand, but they're still fairly bottom rung. Not all HD sets will have a "game" setting because "lol why would you want to play games on a television".

I'm not sure how much you can do if you want the TV for gaming. You should be okay with the 360 and PS3 because no scaling will be involved on the TV's part, but if you want to play your older consoles, you might need to invest in a different set. If you want one for games, you usually have to hunt for one that works. Most of them assume you're just going to watch movies.

This happens because LCD TVs have a "response time" which causes lag between the picture and the game. Component cables are a decent solution. For the Wii, I hope you're setting the display output to 480p in the settings menu?

On our TV there's a "fast processing" option which has helped to reduce synch issues with Rock Band. I'm assuming that's what the Game option does. After looking at a random manual for a random Insignia TV, it doesn't look like your TV has that option.

Also, if you're playing games that don't have a widescreen option, make sure you're setting the Insignia's TV mode to Normal instead of Zoom or whatever.
