Lying awake in bed, an idea for an interesting piece of cuisine came to me. What if I took the idea of "mexican pizza" to the next level ( Read more... )

Add some refried beans and some rice either as toppings or a side dish along with a bowl of salsa and tortillas or tortilla chips? For TexMex, don't remove the jalapeño seeds. Cheese could be pepperjack, cheddar, or monterey.

Someone else brought up refried beans, but not the rice. Nice call.

And I think pepperjack would be a good choice for the cheese. As a bonus, it melts easily.

And the jalepenos would be slice ring-style, I think that would be the best way to get the most flavor from them.

I think so, too. Also the seeds are where the heat is in peppers.

Here all Mexican food is served with rice. And chips and salsa. Now the only "Mexican" pizza I have ever had is that shit put out by Red Baron pizza.

I wonder if the salsa sauce would keep the rice from getting dried out during the baking process

Frozen pizza in general is pretty terrible, especially the specialty ones.

It sounds good, but impregnating the dough with tequila?..hmm that sounds a bit dicey, If you just want it for the taste (which personally I don't like but everyone to their own) rather that the alcohol content you could heat the liquor and burn off the alcohol content first.

We have Mexican pizza here, for some reason it always has the protein as ground beef or chicken *shrugs*.

then again I've now seen a nacho pizza, a dessert pizza and a salad pizza (complete with lettuce...which is cooked)

I really enjoy the flavor of tequila, and I assumed that the alcohol would be baked out of the dough by the normal baking process.

Yeah, I've seen a few other takes on Mexican pizza... but none that have gone as far as I would to try to be authentically Mexican with the choices of ingredients.

You're the second one to tell me not to put tequila in the dough. Why? I've been wanting to try infusing a baked good with tequila for a while. Is it more because it'll kill the yeast and keep it from rising, or is it just about the flavor?

Though perhaps you have a point. Salsa and tequila are known to go together well.

1) Add finely chopped garlic or garlic powder if you prefer.

2) Add pre-fried, crumbled sausage. (pre-fry to get most of the fat out, but don't overdo it. Crumble to save the effort to make those little balls normally seen.)

Both the above assuming you like those things on your pizza...

Or,
3) Just buy a pizza, swill a bottle of tequila and eat while warm.

The garlic is a good idea, but it's pretty much a given on pizza.

As for sausage, I am a vegetarian.

Been there, done that...
