I will try to make Rainbow Cookies (also called Venetian or some other Italian-related name). I have to first secure almond paste (an ingredient I know nothing about) and get a hand mixer (as my beloved Kitchen Aid Standing Mixer is still in Bronxville

Having glanced at the recipe, my suggestion is don't rush and don't stress. If you're overtense, you could get careless, but the recipe reads like the layers should be pretty pliable and easy to work with.

I'm taking on some of my mom's Christmas cookie recipes this year, but nothing I haven't made before or that requires me to not be a bundle of nerves (my standard condition these days). Mad props to you!!

Thanks for the advice. This will be my one and only cookie recipe this year--I am not a good baker but the goodness of the rainbow cookie will inspire me to pay strict attention to the recipe.

j said the almond paste isn't too bad on price. i know its as good as cookie dough right out of the tube. mmmm. good luck!
