Russian or Ukrainian and Old Money.

Soviet born here.

1. They would speak Russian. Period.
If you really want them to get a conversation in Ukrainian, make their place of birth West Ukraine: Lviv, Ivano-Frankivsk, Kamianets-Podilsky, Chernigov. (all of them are easy to find in Wikipedia). Those regions are very Ukrainian in their tradition and have another historical background as the rest of the country.
The central Ukraine and the East have got more bonds with Russia and prefer to speak Russian in the daily routine. And those Ukrainian who was born in Russia would speak Russian only anyway.

2. We do understand the meaning of "blue blood" - we use it in Russian either. But "old money" is not a part of our language and can be easy misunderstood. You better drop it. :-)
