I remember there's a story in the One Thousand and One Nights (found it) about a prince and princess who happen to fall for each other as a result of a djinn prank, despite living far from one another. They eventually meet in person when the prince's retainer tracks the princess down, and set out to return to the prince's homeland. Unfortunately, they're separated and the princess disguises herself as her husband to continue the trip... only to find herself accidentally married to a princess of a country she was passing through. Thankfully, Princess #2 is amiable about the 'surprise, your husband is a woman!' thing, and eventually she and Princess #1 reunite with the prince and both end up happily married to him.
Unfortunately, polygyny in the Islamic world probably isn't what you want, nor are folktales rather than myths. But it's the first thing that comes to mind.
The closest thing I could think of, which unfortunately isn’t very close, is The Erotes, a classical Greek dialogue in which two men argue whether sex with women or with boys is superior.
There's also one of Horace's Odes where a man and a woman almost literally have knives out for each other because they both fancy the same young man... who isn't interested in either of them. .

Also, I'm a Ancient Greek Minor and lol for what texts people used to show kids. Thought sometimes I prefer that *like me reading Mists of Avalon, age 11* than some stupid things people think kids should read.
You might consider looking at the Hindu pantheon; if I recall correctly, many of the gods were aspected, so Gentle Goddess could also turn into Kali the Destroyer. It's not quite polyamory, but it's sort of "married to different personalities/aspects"?
Are love triangles such as the Greek Hephaestus married to Aphrodite who sleeps with Ares out of the question? Or Hera married to Zeus who has several other lovers? Or in Norse mythology, Loki having three wives (the only two names I remember are Sigyn and Angrboda)?
