Why wouldn't have Time Machine saved you? Well, assuming that this was not the work of a single hour. It could have saved you except for the work of the last hour.

Exactly. Time Machine is not versioning. It's incremental nightly backups. It's a typical half-arse solution, as Apple increasingly adopt the UNIX mentality.
