I think Edward sees Bella as a challenge and someone he can let his guard down with in the fact he can't read her mind. She pushes him, makes him THINK. As a human goes, she surprises him.

I agree. I think the fact that she allows be comfortable in that way is a really big deal. He doesn't have to struggle with the noise in his head. She is his complimenting opposite - the ying to his yang.
