Dunno what mushrooms you used, but a wild mushroom version would probably be good. Artichokes as a central ingredient would be excellent. Squash has potential, but you'd need to experiment with the squash/cheese combinations. Tomato and eggplant would work well if one liked eggplant. Red/orange/yellow peppers might work well, but you'd want a strong cheese. Prosciutto would work. Really, anything you'd put in a quiche would work.
Ooh! Now I'm thinking of one with a layer of basil cheesecake on the bottom, tomato on top, with prosciutto separating them. That could be amazing. Ooh!
