How do characters grow.

Here is a question.
How many of you have absolute control on how your characters grow?
For some reason, I have no control over mine. I envision a particular character and then then next thing I know he or she completely takes over on her own.
It's frustrating.

OH, girl, I'll be planning their lives to a tee on paper, jotting down ideas, but once I start writing, they grab hold of the reins and fight with me. Sometimes, I'd have to stop and re-read, then, delete, delete, delete.
