These days we're not cooking them, we're using them in green smoothies. Much easier to get the monkey to consume them that way - blended up with some fruit & nuts & suchlike is a better alternative (IMO) than "cook 'em to death with plenty of fat & preferably some smoked meat".
And with the pathetically low definitions of what constitutes a "serving" of fruit or veg, it's easy to fit more than a day's minimum recommended amount in one smoothie.
One of my favorite dishes is something I call "beans & greens" - kale cooked in olive oil with a WHOLE LOTTA garlic and then a near-painful amount of lemon juice added at the end, served over garlicky homemade black beans. So good. (And very much "You call this comfort food? Good god, you are a Californian, aren't you?" *grin*)
Once I get my spicy carrot-beet slaw recipe perfected, I'll post it.
Most homes don't have a dehydrator, but if you massage a tiny tiny bit of salt and oil onto curly kale and put it in an open oven on the lowest setting, you can make dried kale chips which are dangerously delicious.
