yeast has returned to my life

I spent an entire summer a few years ago cloning yeast. And though that may sound grippingly exciting, it was the stench that had me running. Yeast has returned as I start my first attempts at the age old art of bread making. Let me tell you, smells are not soon forgotten. Yeah, I was worried about infection too. Why d'ya think bread's so hard? It's only a few ingredients, and you get to punch it. Piece of cake (as Marie Antoinette might say).

so why are there things like bread makers? and why do people make cookies and cakes more often than bread, when you eat more bread and it's easier than cookies? And the entire process of waiting for it to rise and making sure you don't ruin it, and the whole "what if it doesn't rise" makes the entire process seem too uncertain to me. Like making a meringue.
