Thanks for sharing! I have been wondering how to use the ramps that I picked up on a whim and especially wondering if the greens ought to be used, how?
My other farmer's market edible acquisition was chives. A huge bundle of chives. Do you have any recommendations for chives?
Ramps: substitute for garlic, leeks or onion in almost any recipe. Use all but the roots. We like it with potatoes au gratin made with smoked butterkase. Just wilt the chopped leaves into whatever dish you're making; they don't need to cook long at all--stir them in at the end of cooking.
Chives: omelet, salad, pasta salad, potato salad, deviled eggs, soup, anything that goes well with an onion flavor
