garlicky cream of cauliflower soup

Don't be fooled by entries such as these as to my daily diet. I had ramen for dinner yesterday. This soup has a light mellow flavor, but that's what I was looking for tonight. If I were serving it for company, I'd probably increase the spices and cheese quantities and add some veggie stock.

Hunh. I'd just recently been thinking of trying to find a cauliflower soup recipe because I realy like cauliflower, have a huge head in the fridge, and wanted some variety in the types of soup I've been making. I may very well try this! It sounds good. And Emmentaler hardly counts as imported here. :)

What a nifty coincidence!

I know it doesn't count as imported there. That's specifically why I bought it. It reminded me of Germany, where it was available in every grocery store I entered. If you do make it, I highly highly reccomend increasing the nutmeg, caraway, mustard and cheese content. I suspect you'd find the soup slightly bland otherwise. You'd probably want salt and pepper, as well...
