As for Yugito's partner, Gatomon would be kind of epic. You could also use Baihumon; he's a tiger Digimon: http://digimon.wikia.com/wiki/Digimon_Sovereigns#Baihumon

I don't think there's anything wrong with using gender-neutral pronouns in a story. (although I do live in The Bubble :P ) Also, having different characters use different pronouns for someone is a neat little backdoor into their heads, although the style of narration would play a big part there.
