Today I made 14 day dry aged ribeye steak with grilled asparagus and rosemary garlic sweet potaotes. The wine is a Chateau St Jean 2004 cab.

No seriously, I was never one to use "notes of vanilla" or crap like that. This wine I could actually taste it. Interestingly enough I let it sit for a bit. Next time try letting your reds breathe for a bit before drinking.

Yea it's probably easier just to decant your reds before drinking as opposed to timing how long to leave it out. I am too lazy to do either and I just swirl my glass a bit before I take sips.

Actually it ended up being a little more rare then medium rare. Oh well :)
