Pan-fried lime fish
Orange Roughy, cut into small chunks (maybe 2 inches square), marinated in Tequila Lime marinade (I used Lowry's out of the bottle)
shake off excess marinade and dip in panko bread crumbs (I've always wanted to use these...)(PS - it would probably work better if you did the standard flour-egg

Tonight, I infused extra virgin olive oil with grapefruit rind and ginger and used half of it to create a vinaigrette for a quinoa salad and used the other half to saute a salmon fillet.
And panko bread crumbs are awesome!
