The Curse of Chalion and Paladin of Souls are both huge favourites of mine. I love the theology of those books...
I remember enjoying The Phantom Tollbooth a lot when I was younger, perhaps because it was so different from everything else I was reading at the time.
I'm about two thirds of the way through Paladin of Souls now, and am enjoying it just as much as the first. Have you read the others in the same world? I understand that they're set in a different time period, and I wondered if they were worth reading. Although, actually, to be honest, I'll probably read them regardless. :-)
The Hallowed Hunt is okay if you lower your expectations a bit. It's an enjoyable book - just not written to the same awesome standard as first two Chalion books.
I adored Penric's Demon, but had mixed reactions to the other novellas in the series.
Among Others sounds interesting. And The Curse of Chalion even more so. I have a load of Lois McMaster Bujold SF on the shelves that I have not yet read, but that fantasy sounds really attractive.
I had to give up on watching Game of Thrones because of the violence. Plus the fact that there were only two of the surviving characters I felt any sympathy for *g*
I honestly don't know if I'd be watching Game of Thrones had I not read the books first. But I was a huge fan of the books before the TV show started. I read the first 3 back in 2003 or so, mistakenly thinking they were a complete trilogy, and have been waiting ever since. I've given up hoping for the book series to ever finish, since the last 2 books have added ever more characters and plot lines, each one slowed to a crawl. So I've transferred my hopes to the TV series, which will at least give me AN ending.

You've just read four books, two of which I love (Walton and Juster, and two of which I really enjoyed (Clarke and Bujold).
I've reread the Juster many times as a child and two or three times since. It isn't just the language. It is also the lessons Milo learns and illustrations by Jules Feiffer (in the Puffin paperback and maybe elsewhere too).
I was probably too harsh in my judgement of The Phantom Tollbooth, to be honest. I borrowed from the library a couple of months ago, forgot about it, found it again, and thought I'd better read it quickly and return it, before moving on to the books I really wanted to read. So I wasn't approaching it in a particularly receptive frame of mind.
ISTR I did read the Phantom Tollbooth in the 80's but felt a little old for it even then. I share the 'fell in love with LOTR, found a lot of other fantasy oddly disappointing' experience, though I read it anyway rather than going for historical fiction so much.
I must re-read Curse of Chalion, I remember loving it but not the details.
