Yeah, I get the whole "be careful of the conservatives" thing. Despite the fact that Davies' intent is for Teen Wolf to be an -ism free 'verse, he still falls into the hetero, male, white normative viewpoint of pretty much every other show ever. Teen Wolf has a lot of big issues (and frankly, between the racism and the consent issues, the issue of queer baiting kind of takes a backseat for me at the moment), and I think that it completely reflects the issues our society has right now.
I'm conflicted on the idea of killing Stiles. On one hand, Davies is famous for killing off main characters (hello Criminal Minds), but on the other hand I think he realizes just how bad the backlash from the fans will be. (Kono was just killed off of Hawaii Five-0 and the fandom is a complete shit storm of anger.) Davies has really praised Dylan for his acting, so I think he would need more than just "oh shit Sterek fans" as a reason to kill Stiles off.
