Could be bad flour or baking soda. This same thing happened when mt stepdad made biscuits once, and we finally figured out that was the problem.

Taste the cake, and if it doesn't taste bad, make a no-bake cheesecake with chunks of the cake in it, top with fudge and whipped cream?
