Today is one of those days that I should have just stayed in bed and not gotten up at all.  Surprisingly the best part of my day was while I was at work...it was the least stressful part anyway.  I was up late last night again...well, not too late I don't think, finishing up Krysta's projects for school...yeah...more like my projects...why do they ( Read more... )

heeh i wouldn't know how yummy, i didn't get to have any lol...though my husband said when he brought the cake in the office with Krysta this morning, the principle and secretary said they knew it would disappear cuz my baking is famous in that school. lol

Pineapple and Cherry Butterscotch Cake

Ingredients:
2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup sugar
1/2 cup shortening
3 eggs -- beaten
2/3 cup milk
1 teaspoon vanilla
brown sugar
3 Tablespoons butter
1 can(16 oz.) sliced pineapple
1 small jar maraschino cherries
whipped cream (optional)

Sift together the flour, baking powder and salt; set aside. In another bowl, cream the sugar and shortening; add eggs. Add milk alternately with the dry ingredients to creamed mixture. Add vanilla and mix well. Grease a 10 inch round cake pan and line with brown sugar, about 1/2 inch deep. Dot with butter. In the pan, place slices of pineapple with a amaraschino cherry in
center of each. Pour the cake batter over the mixture in the pan. Bake at 350 for 50 minutes. Turn out onto plate and serve hot with whipped cream topped with cherries.

lol I dunno yet...she didn't get the grades yet. lol But I know the cake did well cuz there was none left and I saw other kids in her class coming out with some of their projects still on the plates, they had some left over while Krysta didn't. lol All the kids in her class...heck, many of the people in that school (teachers, parents, kids) know of my baking skills. lol I'm always baking things for the school...they're always calling on me to do it when they need something.
