Take a large, round pizza pan (best; but any baking pan will work) and cover it with tin foil (to make clean-up uber easy) and then with Mexican restaurant-style yellow corn tortilla chips.
Smother the chips with one of those packages of already finely shredded cheddar (Sargento?) and goat (or your fav) cheese(s). Sprinkle it with just the right amount of finely diced red onion (thinly sliced green onions are also nice), black olive wedges or slices, finely diced fresh jalapeno (or diced canned jalapeno) if you like it really hot, drained and rinsed black beans, fresh cilantro leaves, and anything else you can think of that sounds good.
Then generously sprinkle the top with Pace Hot Piquante sauce (or your favorite hot sauce or combo of sauces).
Bake in a pre-heated oven @ 350 degrees until the cheese is bubbly hot. Don't let it brown. Watch it. It only takes about five minutes or so. Serve with cocktail napkins and very small plates.
